We source moderately aged Kuroge Wagyu loin from Sakaeya Co., Ltd. in Shiga Prefecture, and cook it using a Spanish-made charcoal oven, JOSPER.

About Dry-Aged Beef (excerpt from Sakaeya website)
There is no official definition of “dry-aged beef” in Japan. To create properly aged beef with reduced moisture and a pleasant nutty aroma, knowledge, technique, experience, and an ideal environment are essential—otherwise the meat will spoil instead of age.
Sakaeya has spent years cultivating its own mold cultures and has a dedicated aging chamber. The aging period is typically 40–60 days, adjusted depending on the individual cut and customer request.

Grilled Vegetables

Seasonal vegetables are grilled in the JOSPER oven while still fresh. Enjoy the smoky charcoal aroma and natural vegetable sweetness.

Steak Haché of Awa Beef Shank from Fujioka Farm

A hamburger-style steak made using only the shank meat of “Fujioka Beef.”
It features a contrast between the charred exterior and rare lean interior. Enjoy it mixed with the egg yolk.

Fujioka Beef is pedigree-certified Kuroge Wagyu raised from carefully selected calves (around 10 months old) sourced from the renowned Wagyu regions of Kagoshima and Miyazaki. Their feed includes natural ingredients such as sake lees, rice bran, pressed barley, corn, and a custom vegetable-finish blend (spinach, carrots, tomatoes, pumpkins, potatoes, etc.).

About Kamiyama Chicken (excerpt from Ishii Foods)
Kamiyama Chicken is raised on a special feed blend containing natto bacteria, lactic acid bacteria, sudachi powder, green tea powder, and chitosan, promoting healthy gut flora and immunity. No antibiotics or antimicrobial agents are used (other than required vaccines). Raised in the clear mountain region of Tokushima’s Yoshino River basin, they grow freely in spacious barns with fresh air and spring water.

Spare ribs from “Awa Bito Pork,” grilled and coated with our house spicy-sweet sauce.
